      Cinnamon Breakfast Muffins

      Muffins freeze extremely well. Store these sweet treats in freezer bags in the freezer, and then thaw as needed, one by one, overnight in the refrigerator so they're ready to grab and go in the morning. These next four slides highlight the basic steps in the Cinnamon Breakfast Muffin recipe.

      Step 1: Making a Batter Well

      First, use a wooden spoon to gently push the flour mixture against the sides of the bowl to make a well. The next slide shows tricks for mixing new ingredients into the batter.

      After moving the flour mixture against the sides of the bowl in Step 1, stir the batter just until the ingredients are moistened. Be careful not to overmix, or the muffins will be peaked and have tunnels and a tough texture. Next, we show you how to transfer the Cinnamon Breakfast Muffin batter into the muffin cups.
