Back in the days when Fridays were meatless, my grandmother would make a Friday lunch dis called "tomatoes and eggs". She would beat the eggs first then add them to the tomaotes in the skillet. Give me a loaf of crispy Italian bread and I was in heaven. This recipe sounds very much the same. I think I will try it.
