Prepare frozen potatoes according to package directions. Sprinkle with chopped parsley and chives while hot.

Watercress Salad

Toss watercress with thinly sliced red onion and diced tomato, and toss with vinaigrette. Top with blue cheese if desired.

Sugar Snap Peas with Ginger Butter

Cut pieces of ginger about the size of garlic cloves. Cook snap peas in a steamer, then toss with butter to coat. Put ginger chunks in garlic press and squeeze ginger juice to taste over buttered peas. Season to taste.
