Start the smoking late in the afternoon for a dinnertime meal. Look for prepared twice-baked potatoes in the freezer section; theyre a quick alternative to baking potatoes from scratch.
Prepare frozen potatoes according to package directions. Sprinkle with chopped parsley and chives while hot.
Toss watercress with thinly sliced red onion and diced tomato, and toss with vinaigrette. Top with blue cheese if desired.
