Do-Ahead Timeline

This timeline shows you how far in advance food preparation for the menu can take place. Following these tips allows maximum time with your guests and minimum fuss.


Up to 2 weeks before:
  • Make the dry rub for the tri-tip; store at room temperature.
  • Make BBQ sauce for tri-tip and store in refrigerator.
  • Make biscuits and freeze.
  • Mix up corn's butter-cheese mixture.

Up to 24 hours in advance:

45 minutes before dinner:
  • Prepare grill.
  • Bring corn's butter mixture to room temperature.

30 minutes before dinner:
  • Cook tri-tip.

15 minutes before dinner
  • Warm biscuits in low oven.
  • Cook corn.
