Make weeknight dinner easier and quicker with this recipe for Meat Loaf by prepping the meat mix and putting it in the fridge until you're ready to use it that night. It'll cook faster if you store the mixture in a bowl in the refrigerator and then put it in the room-temperature pan just before cooking. Lemon Zested Peas and Carrots, Mashed Potatoes, and Raspberry Pinwheels are easily pulled together in less time than it takes to bake the meat loaf.
Cook carrots and peas, toss with a bit of butter and grated lemon zest (the yellow part of a lemon rind).
Plain mashed potatoes are sometimes just the right thing -- they're perfect with meat loaf.
Roll out a refrigerated piecrust. Spread with 2 Tbs. seedless raspberry preserves. Roll and slice 1/2 inch thick. Place on foil-lined cookie sheet, press flat, and bake in a 400-degree oven for 10-12 minutes.
