Tuscan Lamb Chop Skillet will convince you that lamb chops are a quick and easy weeknight meal. You can have the lamb chops on the table in less than 30 minutes. Add Marinated Mushrooms and Artichokes, Broccoli Rabe with Garlic and Lemon, and Marsala Pudding to make this Italian meal complete. The pudding, flavored with marsala, is a simple way to get the flavor of a traditional zabaglione in just a few minutes.
Drain jars of marinated mushrooms and artichokes, toss together with chopped fresh parsley, and serve in lettuce or radicchio cups.
Steam broccoli rabe until tender. In large skillet, saute cooked broccoli rabe with garlic. Season to taste with salt, pepper, and a pinch of sugar. Drizzle with lemon juice.
Prepare instant vanilla pudding mix, but replace 3 Tbs. of the milk called for with sweet marsala wine. Chill and serve with strawberries.
