Swiss Steak Dinner

A classic European-style entree, Swiss Steak is nicely complemented by Sherry Lentil Soup, Braised Zucchini, and Roast Garlic Mashed Potatoes as sides. Canned soup and ready-to-heat mashed potatoes make this meal a breeze. You can roast several heads of garlic at once and save the puree in the freezer for future dinners.
In a large skillet, saute garlic in olive oil. Add slices of zucchini and chicken broth just to about 1/4 inch in pan. Bring to a boil, cover, and simmer 10 minutes until cooked.
Wrap whole heads of garlic in foil and bake in oven alongside Swiss steak for one hour. Squeeze cooked garlic out of garlic peels and mash, and then stir into potatoes to taste.
