Canned soup and ready-to-heat mashed potatoes make this meal a breeze. You can roast several heads of garlic at once and save the puree in the freezer for future dinners.
Stir a dollop of sherry into hot canned lentil soup.
In a large skillet, saute garlic in olive oil. Add slices of zucchini and chicken broth just to about 1/4 inch in pan. Bring to a boil, cover, and simmer 10 minutes until cooked.
