Cook any small pasta (mini shells, orzo, ditalini) and stir into hot white bean soup.
Slice a log of cooked polenta in 1/2-inch slices. Layer in a buttered casserole dish with shredded provolone; add broth to moisten. Cover with foil and bake at 350 degrees F. until hot and cheese melts, or microwave. Use Italian cheese blend in place of provolone if desired.
Saute fresh spinach in olive oil. Sprinkle with toasted pine nuts. Season after tasting -- spinach is naturally salty so be sure not to oversalt.
