Filet Mignon Dinner

The Menu

It doesn't have to be a special occasion to serve filet mignon, and Beef Tenderloin with Mushrooms proves it. Make it in less than 20 minutes, and serve it with Baked Tomatoes, Potatoes au Gratin, and Zucchini with Lemon. Use a package of potatoes au gratin or look for frozen. Crumbled croutons are a good pantry item to keep on hand to add crunch and flavor using only one ingredient -- they're used here for the tomatoes.

Beef Tenderloin with Mushrooms
 
Baked Tomatoes

Cut tops off of small tomatoes. Top with crumbled croutons and drizzle with olive oil. Bake at 350 degrees F. until just cooked; about 15 minutes.

Potatoes au Gratin

Prepare potatoes au gratin according to package directions; adding sliced green onion if desired.

Zucchini with Lemon

Steam chunks of zucchini until cooked through. Toss with melted butter and drizzle with lemon juice. Season with salt and pepper.
