White Bean Hummus with Roasted Tomatoes

  1. Preheat oven to 400 degrees F. Cut the pointed tip from the head of garlic, leaving the bulb intact, but exposing the individual cloves. Remove any loose papery coating. Place the garlic head, cut side up, in a 6-oz. custard cup. Drizzle with 1 tsp. oil. Cover and bake 20 to 25 minutes or until soft. Remove from oven; set aside until cool.
  2. Squeeze softened garlic into a food processor or blender. Add the beans, lemon juice, 1 Tbsp. olive oil, and salt. Cover; process or blend until smooth. Transfer to a serving bowl. Top with roasted tomatoes, if desired.
