Wheat Berry, Sugar Snap Pea, Radish, and Goat Cheese Salad
Ingredients
  • 1 cup  wheat berries
  • 3 cups  water
  • Pinch sea salt
  • 2 cups  bias-sliced fresh sugar snap pea pods
  • 2 cups  thinly sliced radishes
  • 2 tablespoons  walnut oil or olive oil
  • 1 tablespoon  balsamic vinegar
  • 1 tablespoon  honey
  • 3/4 teaspoon  sea salt
  • 1/4 cup  crumbled goat cheese (1 ounce)
Directions

1. Place wheat berries in a strainer; rinse with cold water. In a large saucepan combine the 3 cups water and the pinch salt. Bring to boiling over medium-high heat. Add wheat berries. Reduce heat. Simmer, covered, about 45 minutes or until tender. Drain; cool for 30 minutes.

2. In a large bowl combine cooked wheat berries, sugar snap pea pods, and radishes. For dressing, in a small screw-top jar combine oil, balsamic vinegar, honey, and the 3/4 teaspoon salt. Cover and shake well to combine. Gently stir dressing into wheat berry mixture. Top with goat cheese. Serve immediately.
