Zucchini and Sweet Peppers with Feta
Ingredients
  • 1
    cup chopped onion (1 large)
  • 1
    tablespoon olive oil or cooking oil
  • 3
    medium zucchini, cut into 1/4-inch slices (about 4 cups)
  • 2
    tablespoons water
  • 1/2
    teaspoon ground cumin
  • 1/2
    cup bottled roasted red sweet peppers, drained and cut into strips
  • Salt
  • Black pepper
  • 2
    tablespoons crumbled feta cheese
Directions

1. In a large skillet cook and stir onion in hot oil over medium heat about 5 minutes or until tender. Add zucchini, water, and cumin to skillet; reduce heat. Simmer, covered, for 3 to 5 minutes or until zucchini is crisp-tender.

2. Stir roasted pepper strips into zucchini mixture; heat through. Season to taste with salt and pepper. Sprinkle with feta cheese.

3. Makes 6 servings.
