Superb Roasted Potatoes

Ingredients
1/4
cup olive oil
1/4
cup butter or margarine, melted
2
teaspoons finely snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
4
pounds new potatoes, cut into quarters
1
cup coarsely chopped onion (2 medium)
1/2
teaspoon salt
1/2
teaspoon ground black pepper

Directions

  1. Preheat oven to 400 degree F. In a large bowl, combine olive oil, butter, and rosemary. Add potatoes, onion, salt, and pepper. Toss to coat potatoes. Transfer mixture to a 13x9x2-inch baking pan.
  2. Roast, uncovered, in preheated oven for 40 to 45 minutes or until potatoes are tender, stirring once. Transfer to a serving bowl. Makes 8 to 10 servings.
