Red Sweet Pepper Relish

cup purchased roasted red sweet pepper strips

tablespoon finely chopped pitted ripe olives

teaspoons olive oil

teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed

teaspoon pepper
Directions
In a food processor bowl combine red sweet pepper, olives, olive oil, fresh or dried thyme, and pepper. Cover bowl and process with several on-off turns until coarsely chopped. Cover and chill until ready to serve. Makes about 2/3 cup.
