Red Sweet Pepper Relish
Ingredients
- 1/2 cup purchased roasted red sweet pepper strips
- 1 tablespoon finely chopped pitted ripe olives
- 2 teaspoons olive oil
- 2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
- 1/4 teaspoon pepper
Directions
1. In a food processor bowl combine red sweet pepper, olives, olive oil, fresh or dried thyme, and pepper. Cover bowl and process with several on-off turns until coarsely chopped. Cover and chill until ready to serve. Makes about 2/3 cup.
