Minted French Green Beans

This low-cal side dish recipe is ideal for a summer cookout. Haricots verts, thin sweet green beans, are available from April through July. Refrigerate them, wrapped in plastic, up to several days before using.

Minted French Green Beans

Directions

  1. Rinse beans. Trim tips off beans, if desired. Drain. Place a steamer basket in a large skillet. Add water to just below the bottom of basket.
  2. Bring to boiling. Add beans. Cover. Steam for 2 minutes. Drain. Rinse with cold water. (Or, plunge into ice water.) Drain well.
  3. In a mixing bowl toss beans with shallot, oil, and mint. Season to taste with salt and pepper. Cover and chill for 2 hours. Serve as a salad or side dish. Makes 4 servings.

This is a terrific recipe. I first saw it years ago when I was looking through a magazine in a doctor's waiting room. I wrote down the recipe and tried it, thinking the combination sounded interesting. It was more than interesting ... the delicate crunch of the haricots vert, the sweet bite of the shallots and the cool, high note of mint ... I did not expect to fall in love with a dish of green beans!
