Gruyere-Garlic Mashed Potatoes
Ingredients
- 3 1/2 pounds potatoes, peeled and cut into 2-inch chunks (about 10 medium potatoes)
- 1/4 cup butter
- 2 cloves garlic, minced
- 1/2 cup whole milk, half-and-half, or light cream
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cups shredded Gruyere or Swiss cheese (6 ounces)
Directions
1. Cook potatoes, covered, in a small amount of boiling lightly salted water for 20 to 25 minutes or until tender.
2. Meanwhile, in a small saucepan melt butter over medium heat. Add garlic and cook for 2 minutes. Stir in milk, salt and pepper. Cover and keep warm on very low heat. (Do not scorch.)
3. Drain potatoes; return to pan. Mash with potato masher. Stir in warm garlic-milk mixture. Fold in cheese. Cover and let stand 5 minutes to allow the cheese to melt. Serve with Braised Duck (see Recipe Center). Makes 8 servings.
