Fresh Tomato Saute
Ingredients
  • 2 1/2 cups  whole red grape tomatoes, yellow pear tomatoes, cherry tomatoes, and/or small yellow tomatoes
  • 1 tablespoon  olive oil
  • 1/4 cup  finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon  snipped fresh thyme
  • 1/4 teaspoon  salt
  • 1/4 teaspoon  black pepper
  • 2 ounces  fresh mozzarella, cut into 1/2-inch cubes
Directions

1. Halve the grape, pear, and/or cherry tomatoes or cut small yellow tomatoes into wedges; set aside. Place a large skillet on grill side burner. In skillet, heat oil over medium heat for 2 minutes. Add onion, garlic, and thyme; cook and stir for 2 to 3 minutes or until onion is tender.

2. Add tomatoes, salt, and pepper. Cook and stir for 1 to 2 minutes or until tomatoes are just warmed. Remove from heat. Stir in mozzarella cheese. Makes 4 servings.
