Cheesy Scalloped Corn
cup chopped onion (1 medium)
cup chopped green or red sweet pepper (optional)
tablespoons butter or margarine
9 ounce package frozen whole kernel corn, thawed
eggs, slightly beaten
14 3/4 ounce can cream-style corn
cup coarsely crushed rich round crackers (about 20 crackers)
cup shredded cheddar cheese (2 ounces)
- In a medium saucepan cook onion and sweet pepper in hot butter about 5 minutes or until tender. Stir in thawed corn and salt. Remove from heat.
- Meanwhile, in a large bowl stir together the eggs, cream-style corn, milk, and crushed crackers. Stir in the thawed corn mixture. Transfer to an ungreased 2-quart square or rectangular baking dish.
- Bake, uncovered, in a 325 degree F oven for 35 to 40 minutes or until center appears set. Sprinkle with cheese. Let stand for 15 minutes before serving.
