Cheesy Scalloped Corn

Ingredients

  • 1/2  cup chopped onion (1 medium)
  • 1/2  cup chopped green or red sweet pepper (optional)
  • 2  tablespoons butter or margarine
  • 1  9- or 10-ounce package frozen whole kernel corn, thawed
  • 1/4  teaspoon salt
  • 2  eggs, slightly beaten
  • 1  14.75- or 16-ounce can cream-style corn
  • 1  cup milk
  • 3/4  cup coarsely crushed rich round crackers (about 20 crackers)
  • 1/2  cup shredded cheddar cheese (2 ounces)

Directions

1. In a medium saucepan cook onion and sweet pepper in hot butter about 5 minutes or until tender. Stir in thawed corn and salt. Remove from heat.

2. Meanwhile, in a large bowl stir together the eggs, cream-style corn, milk, and crushed crackers. Stir in the thawed corn mixture. Transfer to an ungreased 2-quart square or rectangular baking dish.

3. Bake, uncovered, in a 325 degree F oven for 35 to 40 minutes or until center appears set. Sprinkle with cheese. Let stand for 15 minutes before serving.
