Candied Yams
Ingredients

medium yams or sweet potatoes (2 pounds)

cup butter or margarine

cup orange juice

cup sugar

cup packed brown sugar

cup raisins

cup water

thin slices orange

thin slices lemon

teaspoon ground cinnamon

teaspoon ground nutmeg
Directions
1. Scrub yams or sweet potatoes and peel. Cut off woody portions and ends. Cut into 2-inch pieces.
2. In a 4-quart Dutch oven melt butter or margarine over medium heat. Stir in orange juice, sugar, brown sugar, raisins, water, orange slices, lemon slices, cinnamon, and nutmeg. Add yams or sweet potatoes. Bring to boiling over high heat. Reduce heat to low. Cover and simmer for 15 to 20 minutes or until yams are just tender.
3. Uncover and simmer about 15 minutes more or until yams are glazed, stirring occasionally. Makes 6 servings.

Very good. Did not use sliced orange or lemon and couldn't find nutmeg. But great, nevertheless.
