Breaded Veggies
Ingredients

cup seasoned fine dry bread crumbs

tablespoons grated Parmesan cheese

egg, slightly beaten

cups cauliflower florets, broccoli florets, whole fresh button mushrooms, and/or packaged, peeled baby carrots

tablespoon butter or margarine, melted
Directions
1. Lightly grease a 15x10x1-inch baking pan; set aside. In a plastic bag combine bread crumbs, Parmesan cheese, and pepper. In a small bowl combine egg and milk.
2. Toss 1 cup of the vegetables in the egg mixture; add vegetables to the plastic bag. Close bag and shake to coat well. Place coated vegetables on the prepared baking pan. Repeat with remaining vegetables. Drizzle melted butter over vegetables.
3. Bake in a 400 degree F oven about 20 minutes or until golden brown, stirring twice.
4. Makes 6 servings.
