Asparagus with Fresh Mozzarella
pound thin asparagus spears
ounces fresh mozzarella cheese, cut or torn into pieces
Freshly ground pepper
Fresh lemon verbena leaves or 1/2 teaspoon grated lemon peel
- Break off woody bases of asparagus. Rinse asparagus. Drain.
- Place a steamer basket in a large skillet. Add enough water to come just below the bottom of the basket. Bring to boiling. Place asparagus evenly in steamer basket. Cover. Steam for 2 minutes.
- Transfer asparagus to an 8x8x2-inch baking pan. Top with cheese. Season with salt and pepper. Broil 4 inches from heat for 1 minute or until cheese melts. Top with verbena. Makes 4 side-dish servings.
