Two-Pepper Hummus Chicken

Ingredients

cup canned no-salt-added or 50-percent-less sodium garbanzo beans (chickpeas), rinsed and drained

tablespoons chopped roasted red sweet pepper

teaspoon lemon juice
1/2
teaspoon snipped fresh thyme or oregano

small clove garlic, minced
 
Dash cracked black pepper

3 ounce cooked skinless, boneless chicken breast half

Directions

  1. In a small bowl, mash beans slightly. Stir in roasted red pepper, lemon juice, thyme, garlic, and black pepper. Spoon over warm chicken breast.
