Turkey-Rice Soup
Ingredients
  • 1 1/4
    cups water
  • 1
    small onion, chopped (1/4 cup)
  • 1
    small carrot, bias sliced (1/4 cup)
  • 1
    tablespoon long grain rice
  • 1
    teaspoon instant chicken bouillon granules
  • 1/8
    teaspoon dried basil, crushed
  • 1/2
    cup diced cooked turkey or chicken
  • 1/4
    cup frozen peas
  • 1
    tablespoon dry Marsala or dry sherry
Directions

1. In a 1-1/2-quart saucepan combine water, onion, carrot, uncooked rice, bouillon granules, and basil. Bring to boiling, then reduce heat. Cover and simmer mixture about 15 minutes or until rice is tender.

2. Stir in turkey or chicken and peas; simmer, uncovered, about 5 minutes or until vegetables are tender. Stir in Marsala or sherry. Makes 1 serving.
