Triple Turkey-Rice Skillet
Ingredients
  • 1/3 cup  chopped onion
  • 1/2 of a medium yellow, green, or red sweet pepper, seeded and cut into 1-inch pieces
  • 6 slices turkey bacon, chopped
  • 1 tablespoon  cooking oil
  • 3 1/4 cups  water
  • 6 ounces  cooked smoked turkey sausage, cut into 1/2-inch slices
  • 1 1/2 cups  uncooked regular brown rice
  • 2 teaspoons  bottled hot pepper sauce
  • 1 teaspoon  dried rosemary, crushed
  • 1/2 - 1 teaspoon  ground black pepper
  • 1/4 teaspoon  salt
  • 2 cups  cubed cooked turkey
  • Warm buttered French bread slices (optional)
  • Bottled hot pepper sauce (optional)
Directions

1. In a large skillet cook onion, sweet pepper, and turkey bacon in hot oil until tender. Stir in the water, turkey sausage, rice, the 2 to 3 teaspoons hot sauce, the rosemary, black pepper, and salt. Bring to boiling; reduce heat. Cover and simmer for 45 to 50 minutes or until rice is tender and most of the liquid is absorbed. Stir cubed cooked turkey into rice mixture; heat through. Serve with bread and additional hot sauce, if desired. Makes 5 or 6 servings.
