Sweet Potatoes with Honey, Prosciutto, and Kale
pound sweet potatoes
teaspoon ground black pepper
tablespoon olive oil
cups coarsely chopped fresh kale
tablespoons chopped shallot (1 medium)
ounce thinly sliced prosciutto, chopped
- Preheat oven to 375 degrees F. Peel sweet potatoes; cut crosswise into 1/4-inch slices. Arrange sweet potatoes in a 2-quart square baking dish. Add the water; sprinkle with salt and pepper. Bake, covered, about 30 minutes or until potatoes are tender; drain.
- In a large skillet heat oil over medium heat. Add kale and shallot. Cook for 3 to 5 minutes or until kale is tender, stirring occasionally. Add prosciutto and honey. Cook and stir about 1 minute more or until mixture is evenly coated with honey and heated through. Serve kale mixture over potatoes.
