Sweet-and-Sour Chicken Bowl

Ingredients

ounces shredded or chopped cooked chicken breast

cups packaged shredded cabbage with carrot (coleslaw mix)

cup fresh snow pea pods, trimmed and halved crosswise

cup raspberry or strawberry spreadable fruit

tablespoons canola oil

teaspoons cider vinegar

cup chopped red apple (1 medium)

Directions

  1. In a large bowl combine chicken, coleslaw mix, and pea pods; set aside.
  2. For dressing, in a small bowl stir together spreadable fruit, oil, and vinegar; stir in apple. Pour dressing over cabbage mixture; toss gently to coat. If desired, cover and chill for up to 1 hour before serving.
