Sweet-and-Sour Chicken Bowl
Ingredients
- 12 ounces shredded or chopped cooked chicken breast
- 4 cups packaged shredded cabbage with carrot (coleslaw mix)
- 1 cup fresh snow pea pods, trimmed and halved crosswise
- 1/4 cup raspberry or strawberry spreadable fruit
- 2 tablespoons canola oil
- 4 teaspoons cider vinegar
- 2/3 cup chopped red apple (1 medium)
Directions
1. In a large bowl combine chicken, coleslaw mix, and pea pods; set aside.
2. For dressing, in a small bowl stir together spreadable fruit, oil, and vinegar; stir in apple. Pour dressing over cabbage mixture; toss gently to coat. If desired, cover and chill for up to 1 hour before serving.
