cups sliced strawberries
tablespoons frozen apple juice concentrate, thawed
12 ounce can diet lemon-lime carbonated beverage
- In a blender, combine strawberries, the 1/2 cup raspberries, and the apple juice concentrate. Cover and blend until smooth. Pour mixture through a sieve into a small pitcher, pressing berries with a potato masher or back of a large metal spoon to extract all of the liquid. Discard pulp.
- Slowly pour lemon-lime beverage into berry mixture; stir gently.
- Serve in glasses over ice cubes. Garnish each serving with a small skewer threaded with additional raspberries.

If you like, make berry ice cubes. Fill the compartments of an ice-cube tray with quartered strawberries. Fill with water and freeze until firm.
