Streusel-Topped Sweet Potatoes
Ingredients

cups 1-inch pieces peeled sweet potatoes
1/2
cup regular rolled oats
1/4
cup packed brown sugar

tablespoons flax seeds

tablespoons cracked wheat, toasted wheat bran, or toasted wheat germ

teaspoon salt

tablespoons butter

tablespoons coarsely chopped pecans, walnuts, or pistachio nuts
Directions
  1. Preheat oven to 375 degrees F. Lightly grease a 2-quart baking dish. Arrange sweet potatoes in the prepared baking dish. Bake, covered, for 30 minutes.
  2. Meanwhile, in a medium bowl combine oats, brown sugar, flax seeds, cracked wheat, and salt. Cut in butter until crumbly. Stir in pecans. Stir potatoes; sprinkle with oat mixture.
  3. Bake, uncovered, about 15 minutes more or until potatoes are tender and topping is light brown.
