Adobo Black Bean Chili

15 ounce can no-salt added black beans, rinsed and drained or 1-3/4 cups cooked black beans

14 1/2 ounce can no-salt-added diced tomatoes, undrained

cup frozen whole kernel corn

8 ounce can no-salt-added tomato sauce

tablespoon canned chipotle chile peppers in adobo sauce, finely chopped

teaspoons chili powder

teaspoon dried oregano, crushed

Light sour cream, chopped avocado, shredded reduced-fat cheddar cheese, and/or lightly crushed baked tortilla chips (optional)
Directions
1. In a 4-quart Dutch oven cook ground beef, onion, sweet pepper, and garlic until meat is brown and onion is tender; drain fat. Stir in beans, diced tomatoes, corn, tomato sauce, chile peppers, chili powder, oregano, cumin, and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes, stirring occasionally.
2. If desired, serve with sour cream, avocado, shredded cheese, and/or tortilla chips.

delicious! i love making this when it's cold outside. my friends even said it was some of the best chili they've ever eaten! i switched the green pepper for a red one (sweeter) and left out the chili powder because I didn't have any and it was perfect
