White Chili with Sausage
Ingredients
  • 1 1/2 pounds  bulk pork sausage
  • 1 cup  chopped onion (1 large)
  • 4 cloves garlic, minced
  • 2 19 ounce can cannellini beans, rinsed and drained
  • 2 14 ounce can reduced-sodium chicken broth
  • 1 14 1/2ounce can white or yellow whole kernel corn, drained
  • 1 fresh poblano chile pepper, seeded and finely chopped (see tip, page 74)
  • 1/3 cup  lime juice
  • 1/4 teaspoon  ground white pepper
  • Crushed white corn tortilla chips
Directions

1. In a 4-quart Dutch oven cook and stir sausage, onion, and garlic over medium heat until sausage is no longer pink. Stir in beans, broth, corn, chile pepper, lime juice, and white pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. Serve with crushed chips.
