Wasatch Mountain Chili

15 - 16 ounce can hominy, rinsed and drained

15 - 16 ounce can great Northern beans, rinsed and drained

14 ounce can reduced-sodium chicken broth

9 ounce package frozen cooked chicken breast strips

cup lime juice

tablespoons chopped fresh cilantro

cup shredded colby and Monterey Jack cheese, Monterey Jack, or cheddar cheese (2 oz.)

Bottled green salsa

White corn tortilla chips

Fresh cilantro leaves
Directions
In a large saucepan cook onion in hot oil over medium heat for 3 minutes. Stir in hominy, beans, chicken broth, frozen chicken, lime juice, cilantro, cumin, and pepper. Cover and bring to boiling over high heat, stirring occasionally. Serve topped with cheese, salsa, tortilla chips, and fresh cilantro. Makes 4 (1-1/4-cup) servings.

cant believe how many of you have changed this recipe around to where it isn't what its suppose to be,make it like the recipe calls for it to be made,it is out of this world,I have to triple the recipe when I make it and at Thanksgiving we tripled it twice to fill everyone up.The lime juice is what sets it off so do not skimp on this,the only short cut I use is I use broasted chicken pulled from the bone,boil the bones and make my own broth,Nothing better!!!

I added red chili powder and oregano to make it more like posole and ate it with corn tortillas with butter. Perfect for tucking in on the couch on a chilly night!

For the frozen chicken I used HEB Frozen (already cooked) Chicken Breast Fajita meat. I also doubled the cilantro. So I guess I changed the recipe quite a bit, but it was GREAT!!! We loved it!
