Pumpkin, Barley, and Sage Soup

ounces cooked andouille or smoked sausage links, chopped

cup quick-cooking barley

cups water

teaspoon instant chicken bouillon granules

15 ounce can pumpkin

tablespoons maple syrup

tablespoon cider vinegar

Salt and ground black pepper
Directions
1. In 4-quart pot or Dutch oven cook sausage, onion, and sage in hot oil over medium heat for 3 minutes, stirring often. Add barley, the water, and bouillon granules. Bring to boiling. Reduce heat; simmer, covered, for 12 minutes, stirring occasionally.
2. Stir in pumpkin, maple syrup, and vinegar; heat through. Season to taste with salt and pepper.

1/6/2011 09:03:09 AM Report Abusethis is just wonderful; easy to prepare. I substitute a carton of Swanson's chicken broth for the 4 cups of water and chicken bouillon. Otherwise, follow it exactly and it is just wonderful.
12/5/2010 02:11:22 PM Report AbuseI used a fresh pumpkin for this that I was stashing away for a tasty soup and feel I wasted it. The taste was ruined by the vinegar in my opinion and I could do nothing to recover from it. A bit of cream helped a little. Not my favorite.
