Mashed Potato Soup
Ingredients

20 ounce package refrigerated mashed potatoes

14 ounce can chicken broth
1/4
cup sliced green onions

ounces Swiss, cheddar, or smoked Gouda cheese, shredded (1/2 cup)
 
Dairy sour cream (optional)
Directions
  1. In a medium saucepan combine mashed potatoes, broth, and green onions. Cook over medium-high heat just until mixture reaches boiling, whisking to make nearly smooth. Add cheese; whisk until cheese is melted. If desired, serve with sour cream. Makes 3 servings.
