Italian Shrimp Soup

Ingredients

cup chopped green sweet pepper

clove garlic, minced

teaspoons olive oil

medium roma tomato, seeded and chopped

cup reduced-sodium chicken broth

tablespoon lemon juice
1/4
teaspoon ground black pepper

ounces peeled and deveined fresh shrimp and/or fresh sea scallops
1
teaspoon chopped fresh basil or 1/4 teaspoon dried basil, crushed
1
teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme, crushed

Directions

  1. In a medium saucepan cook sweet pepper, onion, and garlic in hot oil until tender. Stir in tomato, broth, lemon juice, and black pepper. Bring to boiling.
  2. Stir in shrimp and/or scallops. Return to boiling; reduce heat. Simmer, covered, for 2 to 3 minutes or until the shrimp and/or scallops are opaque. Stir in the basil and thyme.
