Italian Shrimp Soup
Ingredients
  • 1/2 cup  chopped green sweet pepper
  • 1/2 cup  chopped onion
  • 1 clove garlic, minced
  • 2 teaspoons  olive oil
  • 1 medium roma tomato, seeded and chopped
  • 1/2 cup  reduced-sodium chicken broth
  • 1 tablespoon  lemon juice
  • 1/4 teaspoon  ground black pepper
  • 8 ounces  peeled and deveined fresh shrimp and/or fresh sea scallops
  • 1 teaspoon  chopped fresh basil or 1/4 teaspoon dried basil, crushed
  • 1 teaspoon  chopped fresh thyme or 1/4 teaspoon dried thyme, crushed
Directions

1. In a medium saucepan cook sweet pepper, onion, and garlic in hot oil until tender. Stir in tomato, broth, lemon juice, and black pepper. Bring to boiling.

2. Stir in shrimp and/or scallops. Return to boiling; reduce heat. Simmer, covered, for 2 to 3 minutes or until the shrimp and/or scallops are opaque. Stir in the basil and thyme.
