Guacamole Soup

Ingredients

tablespoon vegetable oil

tablespoon butter or margarine

cup chopped red onion (1 large)

cloves garlic, minced (2 tablespoons)

medium avocados, halved, seeded, peeled, and mashed (1-3/4 cups)

14 1/2 ounce can chicken broth or vegetable broth
1 1/2
cups whipping cream
1
cup bottled salsa

tablespoons lime juice
2
tablespoons lemon juice
1
tablespoon ground cumin
 
Assorted toppings, such as avocado slices, chopped red or yellow tomato and/or onion, tortilla chips, lime wedges, fresh cilantro, sour cream, and/or cooked shrimp (optional)

Directions

  1. In a 3-quart saucepan heat oil and butter over medium heat; add onion and garlic. Cook and stir onion and garlic about 5 minutes or until tender. Stir in avocados, broth, whipping cream, salsa, lime juice, lemon juice, and cumin; heat through.
  2. To serve, ladle soup into bowls. If desired, serve with assorted toppings.
