Circles and Squares Vegetable-Pasta Soup
32 ounce carton vegetable broth
cup medium-size pasta
cups frozen diced hash brown potatoes with onions and peppers
cups frozen peas and carrots
14 1/2 ounce can diced tomatoes and green chiles, undrained
Snipped fresh parsley (optional)
- In a large saucepan bring broth to boiling. Add pasta, potatoes, peas and carrots, and tomatoes. Cover and return to boiling. Reduce heat and simmer, covered, for 10 to 15 minutes or until pasta is tender.
- Ladle soup into bowls. If desired, sprinkle with parsley.
