Smashed Potatoes

Directions

  1. In a large saucepan cook potatoes in lightly salted boiling water, covered, for about 15 minutes or until tender. Cool at least 15 minutes*.
  2. Preheat oven to 400 degrees F. Gently flatten or smash with the bottom of a skillet or the heel of your hand. Place on a parchment-lined or greased baking sheet. Drizzle with olive oil. Sprinkle with thyme leaves, salt, and pepper.
  3. Bake 20 minutes or until crisp.
