Shrimp Scampi
Ingredients
  • 1 1/2
    pounds fresh or frozen large shrimp
  • 1/4
    cup butter, melted
  • 1/4
    cup olive oil
  • 6
    cloves garlic, minced
  • 2
    tablespoons snipped fresh parsley
  • 1
    teaspoon finely shredded lemon peel
  • 1/4
    teaspoon salt
  • 1/4
    teaspoon black pepper
  • Hot cooked fettuccinni (optional)
  • Lemon wedges (optional)
Directions

1. Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact. Rinse shrimp; pat dry with paper towels. Set aside.

2. In a 13x9x2-inch baking pan combine butter, oil, and garlic. Broil 4 to 5 inches from the heat for 2 minutes. Add shrimp, parsley, lemon peel, salt, and pepper to baking pan. Toss ingredients to coat shrimp. Broil for 2 minutes. Turn shrimp over and broil for 1 minute more or until shrimp turn opaque.

3. If desired, serve shrimp and butter-garlic mixture over hot cooked pasta. If desired, serve with lemon wedges.

This simple, quick recipe is perfect for last-minute dinner guests. I served it with BHG's rice pilaf, but homemade fettucinni would be incredible, too.
