Salmon Croquettes

cups seasoned fine dry bread crumbs

cup mayonnaise or salad dressing

cup chopped onion

14 3/4 ounce can salmon, drained, flaked, and skin and bones removed

cup cooking oil

Tartar sauce (optional)
Directions
1. In a medium mixing bowl combine the egg, 1 cup of the bread crumbs, the mayonnaise or salad dressing, onion, and parsley. Add salmon to egg mixture and lightly stir to mix.
2. Form mixture into 6, 3/4-inch-thick patties (about 3-1/2 inches in diameter) or 12, 3/4-inch-thick patties (about 2 inches in diameter). Coat both sides of patties with remaining bread crumbs.
3. In a large skillet cook patties in hot oil over medium-low heat for 4 to 6 minutes or until golden brown, turning once. Serve with tartar sauce, if desired. Makes 6 main-dish or 12 appetizer servings.
