Salmon and Orzo
Ingredients

    cup dried orzo
  • 1
    teaspoon olive oil
  • Salt
  • 1
    portion salmon from Salmon Hobo Packs
  • 1 - 2
    tablespoons pitted halved or chopped kalamata olives
  • 1
    tablespoon snipped parsley
  • 1/2
    teaspoon shredded lemon peel
  • 1/8
    teaspoon freshly ground pepper
  • Citrus slices, optional
  • Red onion slices, optional
Directions

Cook orzo according to package directions. Drain; toss with olive oil and season with salt. Place on serving plate or in serving container. Top with salmon; add olives, parsley, lemon peel, and pepper. Serve with citrus slices and red onion. Makes 1 serving.
