Coconut-Poached Mahi Mahi

15-oz. can light coconut milk

Thai green chilie, thinly sliced

lb. skinless, boneless mahi mahi or other firm whitefish fillets

tsp. salt

small head bok choy, torn (about 3 cups)

Crystallized ginger, green chilies (optional)
directions
1. Finely shred peel from lime, then juice the lime. Set aside the peel. In a large saucepan over medium heat, combine the lime juice, coconut milk, green chile, and sugar.
2. Cut fish in 8 portions; rinse and pat dry with paper towels. Rub salt on fish portions, then place in coconut milk mixture in saucepan. Cook fish, covered, for 5 minutes. Uncover; gently stir in bok choy. Cook for 3 to 5 minutes more or until fish flakes easily when tested with a fork. Ladle fish with cooking liquid into bowls. Top with lime peel and, if desired, ginger and green chiles.

I couldn't find Mahi Mahi so used Chilean Sea Bass which was over $25.00 a lb. So the price per serving was way higher. Served it over Uncle Ben's Whole Grain White Rice Creamy Chicken Flavor rice (10 min to cook). The whole dish was incredible! Easy and quick to fix and delicious...don't leave off the crystalized ginger! Thanks BHG!
