
1. Preheat oven to 350 degrees F. In a small bowl stir together black pepper, oregano, salt, onion powder, crushed red pepper, chili powder, and ground cumin. Use about 1 tablespoon seasoning mixture to coat both sides of catfish. Arrange fish in lightly greased shallow baking pan.
2. Bake for 10 minutes. Turn fish over and continue baking for 5 to 8 minutes more or until fish just flakes easily when tested with a fork. Store remaining seasoning mix in an airtight container at room temperature up to 1 month. Use for fish or pork. Makes 4 servings.
