Pico de Gallo
Ingredients

ripe medium tomatoes, peeled and finely chopped

Directions
Combine the tomatoes, red onion, cilantro, salt, and sugar. Mix well. Cover; chill in the refrigerator for at least 2 hours or overnight. Makes about 1 1/4 cups (twenty 1-tablespoon servings).

I make this all the time and I LOVE it! My one year old likes it, too. It is great with chips, on top of baked potatoes, in tortillas with chicken, on top of fish...easy and healthy AND YUMMY!
