This is a delicious and easy recipe. The pineapple and cranberry combination is just the right balance of tart and sweet! I omit the walnuts. However, I have a small dish of chopped walnuts on the side for those who would like to add them as a topping. This is a wonderful "from scratch" addition to any meal and can be made the day ahead and refrigerated overnight - taste even better!
