Apricot Butter
Ingredients
  • 3
    tablespoons snipped dried apricots
  • 1/2
    cup butter or margarine, slightly softened
  • 2
    teaspoons sugar
  • 1 1/2
    teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
Directions

1. In a small bowl place snipped dried apricots. Pour boiling water over apricots to cover. Let stand 5 minutes. Drain well.

2. In a small mixing bowl combine softened butter, sugar, drained apricots, and ginger. Beat until light and fluffy. Cover and chill until mixture begins to firm up, stirring once or twice. Serve immediately or cover and store in the refrigerator for up to 1 week. If made ahead, let stand at room temperature for 15 to 30 minutes before serving. Makes 3/4 cup butter.
