Almond-Raisin Butter

cup golden raisins

teaspoons finely shredded orange peel (set aside)

cup butter or margarine, softened
Directions
1. In a blender container or food processor bowl combine raisins and orange juice. Cover and blend or process with several on-off turns (do not grind). Add almonds; cover and blend or process with several on-off turns until chopped. Set aside.
2. In a medium mixing bowl beat butter with an electric mixer on medium speed until light and fluffy. Add raisin mixture and orange peel; stir until combined. Cover and store in the refrigerator for up to 1 week. Serve at room temperature. Makes 1 cup.
