Zucchini-Carrot Burgers
Ingredients

cup refrigerated or frozen egg product, thawed, or 1 egg

tablespoon olive oil

teaspoon dried oregano, crushed

stone-ground wheat crackers, crushed (1 cup)

cup finely shredded zucchini (1 medium)

cup finely shredded carrots (2 medium)

cup chopped green onions (2)

cup plain low-fat yogurt

clove garlic, minced

whole wheat pita bread rounds, halved

cup shredded leaf lettuce

small tomato, thinly sliced

of a small cucumber, thinly sliced
Directions
  1. In a medium bowl combine egg product, 1 teaspoon of the oil, and the oregano. Add the crushed crackers, zucchini, carrots, and green onions to egg mixture; mix well. Shape the vegetable mixture into four 3 1/2-inch patties.
  2. In a large nonstick skillet heat the remaining 2 teaspoons oil over medium heat. Cook the patties in hot oil for 5 to 7 minutes or until golden brown, turning once. Meanwhile, for sauce, in a small bowl combine the yogurt, garlic, and lemon peel.
  3. Serve patties in pita bread halves with the lettuce, tomato, cucumber, and sauce.
