Pepperoni-Olive Grilled Cheese
Ingredients
  • 4
    slices Italian bread
  • 2
    tablespoons butter, softened
  • 3
    ounces mozzarella or provolone cheese, sliced
  • 1/3
    cup pepperoni, sliced
  • 1/3
    cup olives and/or bottled roasted red sweet pepper strips, sliced
  • 2
    tablespoons pizza sauce
Directions

1. Butter one side of all of the bread. On the unbuttered sides place cheese, pepperoni, and olives. Top with pizza sauce. Place remaining bread, unspread side down on filling.

2. In skillet or griddle, cook over medium heat 4 to 6 minutes, until toasted and cheese is melted, turning once. Or place in preheated panini maker; cook 2 to 3 minutes. Makes 2 sandwiches.
