Pepperoni-Olive Grilled Cheese
slices Italian bread
ounces mozzarella or provolone cheese, sliced
cup pepperoni, sliced
cup olives and/or bottled roasted red sweet pepper strips, sliced
tablespoons pizza sauce
- Butter one side of all of the bread. On the unbuttered sides place cheese, pepperoni, and olives. Top with pizza sauce. Place remaining bread, unspread side down on filling.
- In skillet or griddle, cook over medium heat 4 to 6 minutes, until toasted and cheese is melted, turning once. Or place in preheated panini maker; cook 2 to 3 minutes. Makes 2 sandwiches.
