Meat Loaf and Potatoes Club
teaspoon hot (Madras) curry powder
slices cooked purchased or leftover meat loaf
slices Italian bread topped with sesame seeds
slices American cheese
green onions, sliced
cups hot cooked french fries or 1 cup potato sticks or potato chips
Watercress or arugula (optional)
- Stir together the ketchup and curry powder; set aside. Heat a large skillet over medium heat. In skillet heat meat slices, turning once, until lightly browned and heated through.
- Meanwhile, broil bread on a very large baking sheet to toast. Turn bread then top flour slices with American cheese; sprinkle with onions. Continue boiling until toasted, cheese is melted, and onions are slightly cooked.
- Layer four slices of bread with watercress, meat loaf, and some of the ketchup. top with cheese toast, cheese side up. Add a layer of french fries. Spread the remaining four bread slices with spicy ketchup; place on fries. Skewer with sandwich picks and cut to serve. Makes 4 sandwiches (8 servings).
